Ingredients

    4 cups chickpeas
    10 cloves Garlic
    1/4 cup Lemon Juice
    2 tbsp. tahini
    1 tsp. Olive oil
    1 dash salt

Directions

Your first step is to roast your fresh garlic cloves. Take seven of your garlic cloves, place them on a 12 inch square of aluminum foil and coat them with the olive oil.
Sprinkle with the dash of salt.
Wrap the aluminum foil around the garlic so that all edges are closed.
Bake in an oven set at 375°F for 8 minutes (or unti golden brown and soft. Take out of oven and set aside.

In a strong food proccesor place chickpeas, remaining fresh garlic,lemon juice and tahini.

Puree the mixture until smooth. You may need to stop food proccesor and stir a couple of times.

Add roasted garlic and puree for another minute.

Set aside (refrigerate) so all flavors can mingle...approxiamately 1-2 hours.

    Incredible!
    This recipe got me eating hummus and liking it! My only problem is that we are in CA and use CA garlic which apparently is MUCH stronger than the regular stuff so we had to put in a lot more chickpeas to keep our mouths from lighting on fire. LOL - 2/21/13

    Very Good
    I made this and it was delicious! I did tweak it a bit. I roasted the garlic for 35 min. @ 400 so it was nice and oooooozy. I used only 2 15 oz. cans of beans, 2 heads rather than one (many other recipes had about the same ratio) and a whole jalapeno pepper. Very flavorful! - 4/30/08
