This pizza is easy to make and full of flavor. I only eat half with some green salad, but it's low enough in calories to eat the whole thing for a meal. Ingredients

    Papa Pita greek pita (white or wheat)
    1 Tbs fat free poppy seed dressing
    1 clove garlic, minced
    1/3 c canned mushrooms
    1.5 oz soft goat cheese
    2 slices of tomato, halved
    About 6 leaves fresh spinach
    .5 oz kalamata olives, coarsley chopped
    1 Tbs pine nuts

Directions

Preheat oven to 350 degrees. Pre-bake the pita for 5 minutes, then remove from oven. Layer toppings in order and bake for 10-15 minutes until the cheese is melted and the pine nuts are golden brown. Slice into quarters.
