Ingredients

    Chicken Thighs, 8 with skin removed
    6 red potatoes about 1.5" diameter with skins, washed and cut into quarters
    Olive Oil, 1 tbsp Extra Virgin
    Sour Cream, reduced fat, .5 cup
    Frozen peas, 1.5 cup English/green
    White Wine, 4 fl oz DRY (vermouth) not sweet
    Lemon Peel, 2 tbsp rind from the lemon
    Lemon juice, fresh squeezed without seeds
    Butter, unsalted, 1 tbsp
    Mushrooms, fresh sliced, 2 cups
    Garlic, 3 cloves - peeled and crushed

Directions

Prepare the sauce in a small skilllet. Saute mushrooms, garlic and lemon rind, in olive oil and butter on medium low heat until rinds are translucent. Mix together the sour cream, white wine and lemon juice and stir into skillet. In an oven-proof casserole sprayed with oil, layer chicken, potatoes, english peas, and mushroom garlic sauce. Cover and place in 350 deg oven for 45 minutes.
