Introduction

Number of Servings: 4

Ingredients

    4 cups Morningstar Farms Crumbles
    4 medium bell peppers
    3/4 cup chopped onion
    1 can (14.5 oz.) diced tomatoes
    1/3 cup uncooked rice
    5 tbsp ketchup
    2 tsp oregano
    1/2 tsp salt
    1/2 tsp pepper

Directions

Cut tops off of bell peppers and remove membranes. Mix the following in a large bowl: Morningstar Crumbles, onion, 1/4 tsp oregano, 3 tbsp ketchup, salt and pepper. Stuff each pepper with the mixture and place in a medium baking dish. Then mix the remaining ketchup and oregano with the canned tomatoes in a bowl. Spoon tomato mixture over the peppers. Wrap the dish tightly with foil and cook at 350 for 90 minutes. Makes 4 servings.
