Only about 100 calories per 1.5 cup serving.This is a modified version of cabbage roll soup that I threw together last night. Normally I'd use ground pork, but I didn't have a recipe or the "right" ingredients, so I went with what I had! It turned out great. Only about 100 calories per 1.5 cup serving.

Ingredients

Ground beef, lean, 10 oz
Stewed Tomatoes, 2 large cans
Brown Rice, 1 cup uncooked
Split Peas, 5 tbsp
Amaranth Grain, 1/2 cup
Cabbage, 1 head, chopped
Garlic, 8-10 cloves, chopped
Olive Oil, 1 tbsp
Green Peppers, 1 cup, chopped
Directions
Saute garlic in a little olive oil. Add an onion if you like.
Brown ground beef in a large soup pot. Add rice, amaranth, split peas, & green peppers. Add 2 large cans of diced tomatoes and 1-2 cans of water. Season with salt & pepper, and your choice of seasonings - I used a few tablespoons of a chipotle mix from the dollar store. Dill is also a nice flavour for this soup.
Simmer for at least 45 minutes. This soup gets even better after it's been reheated the next day.
