So, I live in the south and decided to try and make a little healthier version of our regional classic Fried Green Tomatoes. My family and I enjoyed it, so I sure hope you do! So, I live in the south and decided to try and make a little healthier version of our regional classic Fried Green Tomatoes. My family and I enjoyed it, so I sure hope you do!
Number of Servings: 4

Ingredients

    2 medium Green Tomatoes
    1/2 cup Flour
    1/2 cup Italian Bread Crumbs
    1/4 cup Egg Beaters (any egg substitute)
    Seasoned Salt
    Non Stick Spray

Directions

Preheat oven to 350. Line a baking sheet with foil and spray with non stick cooking spray. Slice tomatoes into approximately 1/4-1/2 inch slices (between those two are perfect). Each tomato should yield about four slices not counting the end pieces. You can create a little assembly line for dipping the tomatoes by using three small bowls. In the first bowl combine Flour and desired amount of seasoned salt. Second bowl egg beaters. Third bowl bread crumbs. Dip both sides of the tomato slices in the flour, then the egg beaters, then the bread crumbs. Place on foil lined baking sheet. Bake for about 25 minutes. Each serving is for 2 slices.
