Ingredients

    1.5c Long Grain Enriched Rice
    1 14.5 oz can diced tomato
    1 14.5 oz can Tomato Sauce
    .75c diced onion
    1 green bell pepper chopped
    2 stalks celery diced
    7oz Smoked Ham diced
    7oz Lean Smoked Turkey Sausage (Jennie-O)
    1/2lb shrimp cut in half
    .5T extra virgin olive oil
    2T+ Cajun seasoning
    cayenne to tste
    hot sauce (such as tabasco or tapatillo) to taste
    1/2t thyme
    3 bay leaves

Directions

saute onions, celery and bell pepper in .5T oil, add salt pepper dried thyme and oregano untill onions turn clear. add ham and smoked sausage to the saute and brown. Add dieced tomatos and suace. Simmer 15 minutes. Add 1.5 c rice if more liquid is needed for rice add home made chix stock.
