Introduction

I found a way to give my husband one of his childhood favorites-Ham and Bean soup! I found a way to give my husband one of his childhood favorites-Ham and Bean soup!
Number of Servings: 8

Ingredients

    1/4 c. celery, chopped
    1/4 c. onion, chopped
    2 garlic cloves, minced
    4 T. fresh parsley, minced
    1 T. olive oil
    1 lb Great Northern beans
    4 c. water
    4 c. low sodium chicken broth
    1/2 c. cubed Turkey Ham

Directions

Put dry beans in large pot, cover with water and bring to boil. Boil for 2 minutes then cover with tight-fitting lid and remove from heat. Let cool for 1 hour.

Meanwhile, lightly saute chopped celery and onion in olive oil till soft. Add minced garlic and parsley and cook for 1 minute more. Add to crockpot.

Drain beans (discard water) and add to crockpot with 4 cups fresh water, broth and cubed ham.

Cook on low for 8 hours or high for 6 hours.

Serves 8.
