Introduction

A nutritious, veggie-full, low-cal pasta that is quick to make! A nutritious, veggie-full, low-cal pasta that is quick to make!
Number of Servings: 2

Ingredients

    1 cup whole grain rotini pasta
    1/8 cup organic vegetable stock
    5 cubes Laughing Cow Light Gourmet Bites
    1/4 cup canned spinach
    1/2 cup zucchini, sliced into thin strips ("Julienne")
    1/2 tablespoon I Can't Believe It's Not Butter
    1 teaspoon garlic powder
    1 teaspoon red pepper (flakes or powder)

Directions

Cook pasta according to box directions.

On greased (with Pam) skillet, cook zucchini strips until warmed through and more flexible.

When pasta is done, drain. Put back into small saucepan on medium heat. Add all ingredients and mix until everything is hot and ready to eat!

Can also be eaten cold as a pasta salad.

    This recipe was quick and easy, very tasty too! I didn't use the red pepper flakes because my daughter doesn't like "spicy things," she really enjoyed this dinner. Would definitely make it again. - 4/20/09

    Super good! I added more spinach and some mushrooms. the only thing I realized AFTER making it was I forgot the put in the pepper flakes. Dang it, I get to make it again, YAAA. Thanks for sharing. Keep up the grrrrreat work. - 4/19/09

    I added real garlic, green onions, mushrooms, and squash! This taste absolutely wonderful. I love that's its more about the vegetables than the pasta! This recipe is an absolute keeper! - 6/8/11

    I tweaked this recipe to avoid buying too many groceries...but this still ROCKED. I don't really cook, and this was easy and enjoyable to make. My husband loved it, too. I can't wait to try the "real" recipe. Thank you so much! - 7/4/09
