Blasphemously hot, this hearty vegetable chili will spice up your Friday meals during Lent! Makes a great topper for a little rice or quinoa, too. Ingredients

2 large onions, coarsely chopped
1 green bell pepper, cut into 1/2 inch pieces
3 large garlic cloves, finely chopped
1/2 fresh jalapeno, finely chopped (w/ seeds)
1.5 tblspn olive oil
1 tblpsn (chipotle or reg.) chili powder
2 tblspn salt
(1) 28 oz can of whole tomatoes, coarsely chopped (w/ juice)
2 zucchini, cut into 1/2 inch cubes
(1) 15.5 oz can of kidney beans, rinsed
(1) 15.5 oz can of garbanzo beans, rinsed
2 tblspn semi-sweet chocolate, chopped
3 tblspn fresh cilantro, chopped
Directions
-Sautee onions, pepper, garlic and jalapeno in oil in a 4 quart heavy pot over medium high heat.
-Cook 5 minutes.
- Add chili powder, cumin, salt and cook for 1 minute.
- Add tomatoes w/ juice, zucchini and simmer, stirring, for 15 minutes.
-Stir in beans and chocolate, and simmer for 5 more minutes.
-Garnish w/ fresh cilantro and enjoy!
