Ingredients

    1 lb bag dry navy beans
    8 cups water
    1 medium onion, chopped
    6 cloves garlic, chopped
    1 large stalk of celery, chopped
    15 medium baby carrots, sliced
    4 chicken bouillon cubes
    1/4 tsp pepper
    2 tbs dried parsley
    1 14.5 oz can tomato sauce
    1 14.5 oz can diced tomatoes

Directions

Place beans, water, onions, garlic, celery, carrots, bouillon cubes, pepper, and parsley into a medium pot. Bring to a boil and reduce heat to a high simmer for at leat 2 hours or until beans are tender. Add tomato sauce and diced tomatoes. Simmer for 15 to 30 minutes more.

    I used 4 cups vegetable broth and 4 cups water, tomato paste, and whole tomatoes... it was good, probably could use something in the way of spices but i'm not good with that... - 1/28/08
