Introduction
This is a quick supper. I came up with when I had way too much purchased (bagged) spinach on my hands. You could add a cooked, diced chicken breast to the mix if you choose. This is a quick supper. Ingredients

8 oz. pasta - I chose Penne pasta.
1/4 cup olive oil - could be even less if you choose.
1 clove garlic - chopped.
1 10 oz. bag of fresh spinach
1 C. grated asiago cheese
1/2 c. parmesian cheese
1 t. salt
3/4 tsp black pepper or to taste.
Directions
Cook the pasta according to the directions on the box. While it's cooking, heat the oil oil in a large skillet. Saute the chopped garlic until soft and golden, about two minutes. Add cleaned, chopped spinach as well as halved grape or cherry tomatoes. Cook on medium heat until tomatoes are fully softened and spinach is wilted.
Add to cooked and drained pasta and mix. Sprinkle in grated cheeses. The asiago cheese is a stronger cheese than parmesian so you could add less than the recipe called for.
Salt and pepper to taste.
This makes 6 servings.
