Ingredients

6 c water
bacon 6 slices cooked crisp and drained
potato about 5 med red (600 grams)
corn froz 1.5 c
can 14 oz cream style corn
celery 2 stalks
onion 1 large
carrot 1 large
oxo chicken bouillon 4 tsp
garlic 3 tsp
evap milk 1/2 c
flour 2 tbsp
1/2 tsp black pepper
Directions
Dice and fry bacon until crisp in a large pot. Drain on paper towels. Dice raw veggies and add into pot with water Bring to a boil. Turn down heat and simmer for about 20 minutes until potatoes are cooked through. Add corn niblets, cream style corn and bacon. Stir. Add evap milk with flour until smooth and add to pot. Simmer about 10 minutes until thickened. If you want an even thicker soup, forgo the evap milk and flour mixture, allow soup to cook down with no lid for an additional 30 minutes, then add the milk/flour combo. Can also be partially hand blended before adding corn.

Thanks for looking up my recipe. I actually hadn't realized that I had "shared" it, as I was only looking to do the calorie count for my own reference, so I've editted the instructions and added the forgotten black pepper in the recipe. I do hope that you enjoy it.

Had to rate this - it was great! I did have to change a few things, but only out of necessity. No frozen corn or creamed, used 2 cans corn. I was a little leary of only using 1/2 evap milk, but it was really good. My hubby loved it and had seconds, and couldn't tell it was lo cal/lo fat. Thanks!!! - 10/2/09
