    1 1/2 cups buttermilk
    1/3 cup fresh meyer lemon juice
    1/4 cup butter melted
    1/4 cup flour
    4 egg yolks
    1/2 cup sugar or splenda

    1/ 2 cup sugar
    3 egg whites


mix all indredients except 1/2 cup sugar and egg whites in blender and mix until smooth. whip egg whites until soft peaks form, add sugar gradually until peaks are firm but not dry. incorporate egg whites into lemon mixture. pour into prepared dishes - lightly sprayed with pam or butter and then coated in sugar. bake in a pan of water until lightly brown on top about 30-40 minutes depending on dish sizes
you can take lemon rind and cook in a little sugar until it is crystalized and serve with dessert.
Serve dessert by turning souffle dish over on plate, garnish with whipped cream and lemon rind and fresh berries
