A quick and easy meal when you're in a hurry, using pre-packaged ingredients. A quick and easy meal when you're in a hurry, using pre-packaged ingredients.
Number of Servings: 4


    1 can Chicken (from Costco) 12.5oz (do not drain)
    1.75 cups dry Whole Grain Brown Minute Rice
    1 can green beans, no sodium added, drained
    3/4 cup Shredded Fiesta Blend Cheese
    1.25 cups Water


Drain the green beans, discard liquid. Combine all ingredients except cheese in a microwave safe bowl (including the liquid from the canned chicken). Cover with plastic wrap or bowl lid and microwave on high for 10 minutes, until rice is cooked. There will be a little bit of liquid not absorbed yet. Let sit, covered, for 5-10 minutes for rice to finish cooking & absorb liquid. Add shredded cheese and stir well.

Makes approximately 5 cups, 4 1.25-cup servings.
