Introduction

I wanted breakfast for dinner and this is all i had in the kitchen. I wanted breakfast for dinner and this is all i had in the kitchen.

Ingredients

    3 oz Store bought cubed hash browns
    .25 cup zucchini, diced
    4-5 medium sizes mushrooms, sliced
    3 tbsp onion, diced
    2 tsp fresh or jarred garlic
    salt to taste

Directions

Spray medium skillet with non stick spray. heat the pan on mediun to medium high heat then add everything except the hash browns. Sautee until tender and mushrooms are releasing liquid. Add hash brown and sautee until browned.

    What on earth do you call a hash brown. In Australia - it is just like the ones at Macdonalds and full of fat. Shredded potato dipped in fat and combined into a rectangle with more fat added. I see hash browns in recipes all the time. Ours are obviously not the same as what you can buy. - 1/19/10

    Love the taste & smell while cooking! Is very filling when wanting to eat lite. Even my husband loved it---and he's more a meat & potatoes kinda guy. =) - 4/2/07
