Introduction

Simple one dish meal. Simple one dish meal.
Number of Servings: 6

Ingredients

    2 cups diced ham (extra lean)
    1/2 cup onion (chopped)
    1 tbsp olive oil
    2 cups beef bullion
    1 cup rice (uncooked)
    1 cup peas and carrots (frozen)
    1 tbsp soy sauce.

Directions

In a skillet, add 1 tbsp olive oil. Add ham and onion, saute until onion is tender. Remove onion and ham, set aside. Add 2 cups of bullion, bring to a boil and add rice. Reduce heat and simmer until rice is tender. Return ham and onions to the pan. Add 1 tbsp of soy sauce and 1 cup peas and carrots. Stir and cover pan until peas and carrots are no longer frozen.

Variation: Substitute chicken for ham, chicken bullion for beef bullion. Also, substitute Brown Rice for White.

    Very Good
    I used an instant rice and put some mixed vegetables. It was too salty for my taste and I wonder if anyone has any suggestions on making it less salty. Otherwise a tasty and filling meal, easy to make. - 5/3/09

    you could use low sodium soy sauce or just leave out the soy sauce all together. You could also use canned soup broth that is low sodium instead of bullion.
