Introduction

I'm working at getting an oatmeal cookie that is better for me. Eventually I want to remove the brown sugar and replace it with a natural sweetener and remove the shortening. However, this is my first attempt at making them more nutritious. I'm working at getting an oatmeal cookie that is better for me. Eventually I want to remove the brown sugar and replace it with a natural sweetener and remove the shortening. However, this is my first attempt at making them more nutritious.
Number of Servings: 36

Ingredients

    1/2 cup salted butter
    1/4 cup shortening
    1 cup packed brown sugar
    1/2 cup honey
    1 large egg
    1 tsp vanilla
    1 cup oatmeal
    2 cups unbleached flour
    1 tsp salt
    1/2 tsp. soda
    1 cup raisins
    1 tsp. cinnamon

Directions

Heat oven to 350 degrees. Beat together butter, shortning, sugar, honey, egg and vanilla until creamy. Add dry ingredients; mix well. Drop by rounded spoonfuls onto greased cookie sheet. Bake for 7-8 minutes until lightly browned. Makes about 3 dozen.
