Ingredients

    3 slices bacon diced small
    1.5 cup diced carrots
    1.5 cup diced celery
    1.5 cup diced onion
    1.5 cup diced leeks
    2 cups (l lb) lentils
    4 cups diced ham
    2 to 3 quarts water
    2 cups diced peeled tomatoes (canned or fresh)
    dash of oregano, thyme
    2 bay leaves

Directions

In large pot crisp bacon. Add carrots, celery, onions, and leeks, cook till limp. Add lentils, ham, water, tomatoes and spices. Bring to a boil, then simmer until lentils are tender, 1 1/2 hours to 2 hours. Makes 16 servings
