Introduction

Number of Servings: 3

Ingredients

    3 Boneless, Skinless Chicken Breast
    1 Large Fresh Egg
    3 tbsp of Parmesan Cheese (grated fine)
    1 Clove of Garlic (cut in 3)
    1/2 cup of Bread Crumbs
    2 tsp of Oregano (Optional)
    1 tsp of Basil (Optional)
    1 Tbsp of Parsley

    Needed for Prep and Cooking:
    Non-stick Cookie Sheet
    1 bowl
    1 plate
    Chopper
    Knife and Fork
    Measuring Cups & Spoons

Directions

Prep of 15-20 minutes is for the fancier version.
Prep for the healthier version is only about 8 minutes if chicken is already boneless and skinless.

Preheat oven to 350. If you only have a dark coloured cookie sheet, use parchment paper to cover it just to the edge. (saves on cleaning too)

Cut garlic clove in three and throw in chopper, unless you can finely chop garlic, pulse the garlic
until finely minced. Add Bread crumbs to chopper, pulse together for 2 seconds, add cheese and spices and pulse again until well blended. You may need to use a fork to clear the sides of the chopper. Pour bread crumb mix onto a plate.

In one bowl, beat egg until well blended.

Take one chicken breast and coat both sides evenly, then placing the chicken on top of the bread mix and coat evenly again. (Can use a spoon to cover it up a little more.)
Place chicken breast on cookie sheet.
Repeat until all chicken breasts are coated on both sides and placed on the cookie sheet.

Cook chicken at 350 or until chicken is no longer pink.

Bellisimo! You now have a wonderful healthier way of making parmesan chicken.

For a fancier version with more calories:
Mix 1 tsp of Worschester and 1/4 cup of melted margarine.

Before placing chicken on cookie sheet, roll up the chicken and place a toothpick in the middle to hold it together. (Be careful of the toothpick when you start to eat.) Chicken should look like a spiral on the side.

Once the chicken is rolled place in a baking dish and pour mixture of margarine over top chicken; however make sure you do not saturate it. You can always use the left over margarine mix the next day if there are any left overs.

Some of my family members actually prefer the left overs the next day.
