Introduction

A healthier egg salad made with lite sour cream instead of mayo. It's definitely different than normal egg salad but we like it a lot, and I hope you do too. Ingredients

    6 hard boiled eggs
    5 tbsp lite sour cream
    1 tbsp lemon juice
    2 tbsp diced onion
    2 tbsp dill pickle, chopped small
    1/2 tbsp dijon mustard
    1/2 tbsp fresh chives
    2 tsp paprika
    salt and pepper to taste




Directions

Mash eggs with fork into bite size pieces.

In a bowl, mix all other ingredients together. Add eggs and mix well.

For the onions, you can use any kind you have on hand such as red onions or shallots. I found this recipe online and modified it a bit to suit my family's taste. I like it because it doesn't try to imitate the taste of mayo. Serve it over spring greens, in a pita or on good bread.
