Introduction
This delicious pizza is low in calories, high in fiber and amazingly easy to make! This delicious pizza is low in calories, high in fiber and amazingly easy to make!Number of Servings: 2
Ingredients
-
1/2 Cup Fiber One Cereal
1/2 Cup Quick Oats
5 Egg Whites (I used liquid egg whites - 3/4C + 3 Tbsp)
1 clove garlic
1 Cup Del Monte Diced Tomatoes - Basil, Garlic & Oregano
1/2 Cup Kraft Fat Free Mozzarella
Directions
-Pre-heat oven to 350 degrees.
-While oven is pre-heating, grind the fiber one and quick oats in a food processor until it forms a fine texture.
-Add the egg whites and garlic clove.
-Lightly spray a non-stick skillet with a cooking spray and cook the batter like a pancake. Cook this to your desired "done-ness".
-While this is cooking, measure out 1 cup of the Del Monte tomatoes - I made sure to drain the liquid so that it wasn't so soupy - and blend in the food processor, if desired.
-Lightly spray a non-stick cookie sheet (or use a pizza stone if you have one!) and move the pizza base from the pan to the cookie sheet/pizza stone.
-Spread out the 1 cup of tomatoes on the base, then sprinkle with 1/2 Cup of Kraft Fat Free Mozzarella.
-Bake in the 350 degree pre-heated oven until the cheese melts.
This will make two servings and it's VERY filling! I eat this with a side salad. You can, of course, make your own alterations - add veggies, turkey pepperoni, etc.
