Portabella Mushrooms stuffed with Ground Turkey, Spinich, Red pepper, spinach, and Feta cheese

Number of Servings: 3

Ingredients

    3 whole portabella mushrooms, (Stems removed)
    2 oz ground turkey ( I use precooked and grind it myself...makes for less cooking time)
    1/4 cup red bell pepper
    thick slice medium onion
    1-2 cloves garlic
    3 oz fresh Spinach
    salt
    pepper

Directions

Preheat oven to 400
Spray 3 portabella mushrooms with non-stick cooking spray (I use Olive oil) and sprinkle with salt and pepper to taste. Set aside.
Finley chop or grate red pepper, onion, garlic cloves and turkey (if using pre cooked) and mix together.
Place mushrooms in preheated oven while cooking remaining ingredients.
Saute mixed ingredients until heated through, add spinach and continue to cook down.
Add feta cheese, salt a pepper (to taste)
Stuff mushroom caps and cook 20 minutes.
Makes 2-1/2-3 servings.
(My husband and I eat 1-1/2 ea with a small salad for a lite diner)
