A high protein, low sugar cookie treat! A high protein, low sugar cookie treat!
Number of Servings: 20

Ingredients

    Almond Butter (1/2 cup)
    Sugar Substitute for baking (1/2 cup)
    2 egg whites
    vanilla protein powder (1 cup)
    Instant Oats (1&1/2 cup)
    maple syrup (1-2 tbsp)
    water (1/4 cup)
    cinnamon (1 tbsp)
    flour (as needed-about 0.2 cup)


Directions

Mix almond butter, sugar substitute and egg whites using an electric mixer. In another bowl, mix oats, cinnamon, and protein powder (I use a vanilla powder by Designs for Health where my husband works, but several types should work!). Add dry mixture to wet ingredients and mix. It will likely be dry, so add water as needed. You do not need to add water (it will be more like biscotti if you do not), but if you do, you will have more of a cake-like cookie. Add maple syrup and mix all together. You may need to add flour if the mixture is too runny and/or to make the batter rise a bit. Place on a greased cookie sheet and cook at 350 degrees for about 8 minutes (per batch). Cookies will be done when there brown along the bottom and outside ridge.

    These look great...I have 2 huge tubs of brown rice protein powder to try and figure out what to do with. going to try them tomorrow but w/out the sugar substitute :) Thanks for the idea! - 9/18/10
