Ingredients

    6 Lasagna noodles (4 oz)
    10 oz package of frozen spinach
    2 c. skim milk
    2 TBSP cornstarch
    1 TBSP dried minced onion
    1 1/2 c. diced fully cooked ham (1/2lb.)
    1/2 tsp italian seasoning, crushed
    1 C. low fat cottage cheese
    1C. shredded Provolone/mozzarella (4 oz.)

Directions

Cook lasagna noodles, drain, rinse, drain, set aside.
Cook spinach & set aside.
For sauce, in medium pan combine cornstarch, milk, & onion. Cook till thick & bubbly + 2 minutes.
spread 2 TBSP bottom of 10x6x2 in baking dish.
Stir ham & italian seasoning into remainder of sauce.
Arrange 3 noodles in dish, spread 1/3 of sauce & then layer in spinach.
Layer another 1/3 sauce , cottage cheese & half of the mozzarella. Put last 3 noodles atop and then top with remaining sauce & mozzarella.
Bake at 375 F. for 30 minutes. Let stand 10 minutes & serve.

    Very Good
    didn't cook the sauce long enough, so needed to leave it in the oven 10 extra minutes. may want to bake on a cookie sheet as mine spilled over a little. very good taste and quite filling - 5/9/09
