Introduction

Modified version of Pina Colada Cupcakes Modified version of Pina Colada Cupcakes
Number of Servings: 16

Ingredients

    1 cup whole wheat flour
    1/2 t baking powder
    1/4 t baking soda
    pinch of salt
    3/4 c granulated sugar
    1/4 c grapeseed oil (can substitute any cooking oil)
    1/4 c Whole Milk
    3/4 cup crushed pineapple
    3 tbsp shredded coconut

    Powdered sugar and water for frosting/glaze

Directions

mix all ingredients (except powdered sugar) and put in muffin tins. Grease the tins, or use cupcake liners.

Bake at 350 for 20-25 minutes.

Mix powdered sugar with a little water and glaze cupcakes when cooled.
