    Two medium to large zucchinis chopped up
    1.25 Tbsp butter
    Adobo seasoning to taste


Cut up the zucchinis

Place in large pot of water so water covers the zucchini

Add a sprinkle of adobo

Boil until zucchini is extremely soft

Strain the zucchini in a colander

Mash the zucchini and drain remaining water

Put in bowl add the butter and adobo to taste then serve Makes 2 servings

    I grow my own zucchini as well and never thought of this either. I will probably seed them as well but do you peel them as well? Sounds Yummy!!! - 4/14/09

    I do not peel them in my opinion they are much better it the peel on it gets soft but gives enough to actually bite into

    adobo is actually a mexican seasoning made by goya it's an all purpose seasoning with pepper
