This recipe is NOT mine, but I found it online researching Passover meal ideas, and it turned out SO good that I have to share it. It is more of a dessert or a breakfast dish, but perfect for any holiday! Ingredients

2 lbs carrots, boiled until soft
6 egss
2/3 cup sugar
6 Tbsp Matzo meal (3 oz crushed matzo crackers)
2 tsp Vanilla extract or Molasses
Dash of Nutmeg
2 sticks of butter or margarine, melted
Topping:
6 Tbsp brown sugar
4 Tbsp butter, melted
1 cup finely chopped nuts of your choice
Directions
Preheat oven to 350 degrees Fahrenheit and grease 9x13 pan.
After the carrots are soft, put the carrots and eggs in a food processor and puree. Add the next 5 ingredients until smooth.
Bake for 40 minutes; edges should be slightly browned. Then add the topping and smooth over entire top, and bake for an additional 5-10 minutes.
