3/4 pound skinless, boneless chicken breasts
all purpose flour
dried thyme
minced fresh chives
salt
fat-free milk

Directions
In a mini food processor of blender, combine the bread, cheese, and pepper; pulse until the mixture is the consistency of coarse crumbs. Preheat the oven to 350 degrees; spray a 2-qt. casserole with nonstick cooking spray.
In a large skillet over medium heat, melt butter. Saute onion and celery until soft, about 5 minutes. Add the chicken; sprinkle flour, thyme, chives, and salt. Cook, stirring frequently, 5 minutes. Stir in the milk; cook, stirring frequently, until the sauce thickens, 2-3 minutes. Remove from heat; stir in the bell pepper. Transfer to the casserole; sprinkle with the crumbs and paprika. Bake until golden brown, 30-35 minutes.
