Ingredients

    1 can chickpeas
    1 med onion, minced
    3 cloves garlic, minced
    4 tsp ginger root, minced
    1 tbsp curry powder
    1 tbsp garam masala
    1/2 tbsp cinnamon, ground
    1/2 tbsp whole cumin
    1 tsp coriander, ground
    1 tsp cardamom, ground
    water

Directions

Combine chickpeas with liquid, onion, garlic & ginger and cover in a medium sauce pan.
Simmer on med-hi for 30 min.
Using back of wooden spoon, mash beans.
Add spices and water to cover.
Cover and simmer for additional 20 min, periodically mashing beans.
Remove cover for last 10 minutes, and allow liquid to evaporate.

Makes 5 1/2 cup servings.

    Incredible!
    This is so good! I added some chopped green onion for a hit of freshness and topped it off with a little lime juice. This is a killer vegetarian dish! - 8/30/08
