I make this recipe when I am craving Italian. I usually serve it with Broccoli and a Salad. My family loves this one and it looks wonderful! And it is reasonably fast and easy! Ingredients

    1-chicken skinless-boneless chicken breast
    2 Tbsp Italian Bread crumbs
    1/2 cup Hunts spaghetti sauce
    1 (1oz) slice mozzarella cheese


Directions

Preheat oven to 350 degrees.
1) I put my chicken breast into a sandwich bag and pound it to remove excess fat and also to flatten it so it cooks more evenly.
2) I spray my stove top grill with non-fat cooking spray, then roll the chicken breast in the bread crumbs (you can dip them in milk if you feel you need to, but add the extra calories if you do), then cook chicken breast on grill until fully cooked (about 3-4 minutes per side).
3) Spray non-fat cooking spray into baking dish and spread 1/2 cup of spaghetti sauce on top of the cooked chicken breast, then cover with a slice of mozzarella cheese and sliced black olives.
4) Place in oven and cook until cheese is melted (about 10 minutes)

    This is GREAT. It's quick & easy. I did use less oil than the recipe called for the second time I made it & found it did just as well with less oil. - 11/10/09
