Ingredients

    *Canola Oil, 1 tbsp (remove)
    Onions, raw, 1 cup, chopped (remove)
    Spinach, canned,drained 1 cup (remove)
    *HyVee Egg Substitute, 2 cup (remove)
    *Cheese, Kraft Mexican Style Taco Cheese, 3 cup (remove)
    Salt, .25 tsp (remove)
    Pepper, black, .125 tbsp (remove)

Directions

1. preheat oven to 350* lightly grease muffin tins
2. heat oil in large skillet, add onions & cook unitl soft, Stir in spinach cooking until excess moisture is evaporated.
3. in large bowl combine egg substitute, cheese, salt & pepper. add spinach mixture & stir to blend. Scoop into prepared muffin tins.
4. bake in preheated oven until eggs have set, about 30 minutes let cool for 10 minutes before serving.
