    1 tbsp extra virgin olive oil
    1 yellow onion sliced
    4 cloves garlic chopped
    1 lb of stew beef
    1 can of diced tomatoes, no salt added
    1/2 cup canned tomato sauce
    1 can black beans
    1 medium green bell pepper
    1 medium red pepper
    1 tbsp medium taco sauce
    2 tbsp chili powder
    1 tbsp ground cumin
    1 tbsp mexican oregano
    1 tbsp ground cayenne pepper
    2 tbsp fresh cilantro, chopped
    salt and pepper to taste


On high heat saute the beef in the olive oil until beef is well browned on all sides
Remove the beef from the saute pan and strain in a colander
Add the onion to the pan. Saute until onions are soft.
Add garlic and saute garlic quickly.
The add the canned tomatoes, taco sauce, tomato sauce, and seasonings except the cilantro.
Add the meat back to the pan and mix everything together.
Bring back to a boil, then turn heat down to low.
Cover and simmer for 30-40 minutes.
Then add the black beans, and the green and red pepper.
Let simmer for another 20 minutes. Add cilantro during the last 4-5 minutes of cooking.
