My son loves spinach and requests it several times each week. Adding fresh spinach to scrambled eggs is another way for us to get more of his favorite veggie! Ingredients

1 slice bacon, cut into pieces
1/4 C chopped onion
2 C fresh spinach, chopped
3 eggs, whipped
2 T Parmesan cheese
Directions
Cook bacon in a skillet until it is soft. Add onions and cook until onions are translucent. Rinse the spinach and add it to the skillet. Toss until wilted.
Pour in the eggs and stir until cooked.
Sprinkle with Parmesan cheese.

Really good! I love spinach and eggs together. So yummy! The only addition I would make to the dish is maybe a sprinkle of Ms. Dash seasoning of your choice to combat the lack of salt. I know, it has bacon, but not enough to really flavor the spinach. But, that said, this will be a go to recipe - 6/22/11
