    16 Jumbo Pasta Shells
    2 cups nonfat Cottage Cheese
    1/2 cup Parmesan Cheese, grated
    1 cup shredded mozzarella cheese
    1 large egg
    1 tsp salt
    1 tsp black pepper
    1 T dried parsley

    1 8 oz can Tomato Sauce
    1 6 oz can Tomato Paste
    3 medium fresh tomatoes
    2 cloves garlic
    2 T basil
    1 tsp ground oregano


Boil pasta shells to al dente stage (about 7 minutes).

Mix first group of ingredients and stuff shells.

Mix 2nd group of ingredients and pour over stuffed shells. Top with 1/2 cup shredded mozzarella cheese.

Bake at 400* for about 45 minutes.

Serves 8. (2 shells per serving)

  • This was easy to prepare. I used a can of unsalted diced tomatoes instead of the three fresh and it worked out fine! I will surely be making this again! Thank Emily!! - 5/5/09
