Introduction

This low calorie dressing is perfectly tangy with a hint of fruit and little bursts of rosemary and lavender. I made this after Trader Joes stopped making the Balsamic Vinegarette (in the refridge section) that I loved and had lavender in it. It's not as creamy as theirs was but still full of flavor. Ingredients

    - 3/4 c. balsamic vinegar (try to get a decent to good one that's at least 10 yrs. old)
    -1/4 c. red wine vinegar
    -3 tsp. Dijon mustard
    -1 Tb. honey (or a little more is you want it sweeter)
    -2 tsp. salt (optional)
    -1 1/2 Tb. lemon juice (about 1 lemon)
    -1 tsp. fresh rosemary, chopped
    -1 tsp, fresh thyme
    -1/2-1 tsp. lavender blooms 9dried or fresh)
    -1/4 c. plus 2 TB. extra virgin olive oil


Directions

Makes 1 pint (16 servings at 2 Tb. each).

Put all ingredients,except olive oil, into a small mixing bowl. Whisk until honey and mustard are emulsified. While whisking, drizzle olive oil into mixture. Store in refrigerator. Shake before each use as there will be some separation.
