Introduction

Heavy on the veggies and it has turkey meat!
I wanted something that was substantial and comforting -- without the crazy calories. This seemed to fit the bill.

Number of Servings: 9

Ingredients

    2.5 lb Ground Turkey Meat
    14 oz can Artichoke Hearts (drained)
    13.25 oz can of Mushrooms - Stems & Pieces (drained)
    28 oz can Diced Tomatoes With Garlic, Oregano, & Basil (undrained)
    1 Spaghetti Sauce Spice Packet
    1 Red Bell Pepper (diced)
    2 cups Zucchini (diced)
    3-4 cups of Broccoli (chopped)
    2 jars (52 oz total) Spaghetti Sauce
    1 cup water

Directions

1.) Brown the meat in a large stock pot
2.) Add the spaghetti spice pack and simmer for 3-5 minutes
3.) Add the fresh Veggies and garlic -- let cook for about 3-5 min
4.) Add the remainder of the ingredients -- heat to a light boil.
5.) Reduce heat -- let simmer for approx 30 to 45 min.

Serve over pasta -
Makes approx 9 two cup servings.

Note: I used "Safeway Select Artichoke Pesto Pasta Sauce" but I am sure any jarred sauce would work.
