Ingredients

    2 lbs boneless skinless chicken breasts
    1 cup cubed sweet potatoes
    14.5 oz can black beans
    14.5 oz can diced tomatoes
    1 cup chicken stock
    1/2T Jerk seasoning
    1 small banana, mashed (about 1/4c)
    1 Bag baby spinach (8 cups)

    ------------------
    Marinate ingredients:
    1 T jerk seasoning
    Diced onions and peppers

    *Rub chicken with seasoning, onions and peppers, marinate in the fridge for at least 2 hours

Directions

Brown chicken in a skillet on both sides, then chop into bite size pieces (will still be raw inside)

Microwave sweet potatoes (~ 3 mins) to make them easier to chop.

Additionally I added a 1/4 tbsp of jerk seasoning to the crock pot.(this is a paste imported from Jamaica by the company GRACE, you can usually find it at ethnic food stores, I live in the city so it's a little easier for me)

Add all items to the crock pot - I did not drain the beans, but you could and it would be thicker.

Cook 4 hrs on high, or longer on low
