Introduction

Ingredients

1 c. 100% whole wheat flour
3/4 tsp. baking soda
dash salt
1/2 c. plus 1 tbs. unsweetened cocoa powder
2/3 c. Splenda (or adjust to your taste)
1/2 c. prune puree (I used Gerber baby prunes)
1/3 c. plain or vanilla yogurt
1 tsp. vanilla extract
about 1 tbsp. vanilla sugar (made from either putting a vanilla bean in with your sugar and letting it sit, or pulverize a bean with your sugar in a food processor or blender.) I just put a couple of drops of vanilla extract in with the sugar because vanilla beans are VERY expensive.
Directions
Preheat oven to 350 degrees. Spray 2 baking sheets, or cover them with parchment paper or silicone baking mats.

Mix flour, soda and salt together and set aside.

In a medium mixing bowl, mix prune puree with 2/3 c. sugar and cocoa, stir to combine. Add yogurt, vanilla, and balsamic glaze, stir and mix well. Add flour mixture and stir until just combined, don't over mix.

Drop tablespoons of dough onto baking sheets about 1 1/2 in. apart. Using back of spoon, flatten each cookie slightly and sprinkle with vanilla sugar.

Bake for 9-11 minutes - be careful not to burn the bottoms!

Remove from oven and allow to cool completely. These taste best cold, and even better the next day.
