Ingredients

    Rub:

    2 tsp. salt
    1/2 tsp. pepper (seasoned pepper)
    1 tsp. cumin
    1 tsp. chili powder
    1 tsp. cinnamon

    Glaze:

    1 cup brown sugar(packed)
    2 Tbs. minced garlic
    1 Tbs. Tabasco suace.

    2 pork Tenderloins (together weighing 2 1/2 LBS.)


    Preheat oven to 350 degrees.
    Mix rub and rub on all sides of tenderloins. Heat 2 TBS olive oil till it is smoking and brown tenderloins for a total of 4 minutes.

    Spoon glaze on hot browned loins and roast in oven until temp reads 140 degrees or cook 20-30 minutes. Don't cook too long as it will dry out.

    Slice in 1/2" medallions, and cover with sauce.
