Introduction

The thought of eating a "fish" taco just did not sound right to me. When I think of a taco I think of ground beef, lettuce, tomato, cheese, etc. Well, while trying to figure out something new for dinner one night, I called my sister who suggested this recipe. I love fish and I love tacos, so I thought I should give it a shot, and really liked it!!!

So give it a try and I hope you enjoy it as much as I do!!

Ingredients

    4 Tilapia Fillets
    6 8" Corn Tortillas
    1 Bag ready made coleslaw mix
    4 Tbsp fresh cilantro roughly chopped
    1 Green onion, sliced or minced
    1 Tsp diced jalapeno
    2 Tbsp light mayo (try to find the olive oil based)
    2 Tbsp fresh lime juice
    1/2 Tsp ground cumin
    1 Whole avocado, sliced
    Salt and pepper to taste

Directions

Pour enough vegetable oil to cover the bottom of a small skillet (for frying)
Sprinkle salt and pepper on tilapia and gill
Combine all other ingredients with coleslaw mix and set aside
Fry the corn tortillas in the vegetable oil to form into a v-shape--Pat dry to remove excess oil.
Assemble fish tacos-1/2 tilapia fillet=1 fish taco
Eat and Enjoy!
