Introduction

Waldorf type salad that I made that tasted really good! Waldorf type salad that I made that tasted really good!
Number of Servings: 4

Ingredients

    Salad:
    1 red pepper
    1/4 cup Feta Cheese, crumbled
    1/3 cup dried Cranberries
    1 Granny smith apple
    0.5 cup Pecans (chopped or halves)
    4 cups fresh Spinach

    Dressing:
    4 tablespoons balsamic vinegar
    Olive Oil, 4 tbsp (remove)
    Brown Sugar, 2 tsp packed (remove)

Directions

Dressing:
Mix up the olive oil, brown sugar and balsamic vinegar together. Can substitute maple syrup for brown sugar (I just rand out so subbed in some brown sugar).

Salad:
Put spinach in a bowl. Roughly chop up the red pepper and the apple and throw both in. Add in the cranberries. Then crumble the feta cheese and pecans on top. Drizzle dressing on top and enjoy! Makes about 4 side salads.
