Ingredients

    Chicken Breast, no skin, 12 ounces
    Ginger, ground, .5 tsp
    Paprika, .5 tsp
    *Onion powder, .5 tsp
    Garlic powder, 1 tbsp
    Bragg Raw-Unfiltered Organic Apple Cider Vinegar, 1.5 tbsp
    Hunt's Ketchup, 1 cup
    *Kikkoman Lite Soy Sauce, 2 tbsp
    Brown Sugar, 2 tbsp packed
    *Dole Pineapple Chunks in 100% Pineapple juice No Sugar Added, 2 cup
    Maraschino Cherries w/ juice - approximately 12 cherries

Directions

Heat oven to 400 degrees. Cut chicken into bite size pieces, place in a single layer in a well greased 9 x 13 inch pan. In a small bowl mix together spices and vinegar. Brush half of mixture over chicken.
Bake chicken 5 minutes. Turn pieces, then baste with remaining spice mixture. Return to oven for another 5 minutes.
Combine catsup, soy sauce, pineapple, cherries (with juices of both)and brown sugar. Pour over chicken, return to oven for 30 more minutes. Serve hot.

    Just wondering if the cup of ketchup is a mistake, in the calorie breakdown only 2 tbs per serving for 4 servings that is only 1/2 cup, or the calories per serving need to be increased by 40 calories. - 5/9/14

    Thank you for this recipe! I revamped it a bit to make it work better for me, but the basics are still there. Served over brown rice with a side of broccoli. Hubby and I both loved it. - 4/17/14
