Introduction

The caramel, chocolate and touch of salt with the crackers made these a huge hit with the gang. The calorie count is low -- if you can stick to just one serving. Ingredients

    Saltines - to fill the baking sheet (40 fits on mine). I use the whole wheat ones.

    Butter (do not substitute), 1/2 cup

    Granulated Sugar 1/3 cup

    Vanilla extract 1 Tsp

    Semisweet chocolate chips 2 cups

Directions

**Line a greased baking sheet with saltines (salted if you use unsalted butter, unsalted if you use salted butter).

**Melt 1/2c butter (only butter!) and stir in 1/3 cup of granulated sugar and 1 tsp vanilla extract.
Once melted spread over crackers evenly

**Bake at 350degF for about 8-10min until sugar caramelizes.

**Immediately sprinkle 2c chocolate chips evenly over the crackers. Once they melt spread the chocolate over the crackers.

**Refrigerate until cooled and break into pieces.

**Some Notes on my Edits (Mar 23, 2007):

1. Nutritional information is calculated estimating a serving size of 1 saltine= 1 serving.

2. 40 saltines fit on my baking sheet (I was going off of memory before and I was way off on the size of the saltines)

3. I found whole wheat saltines at the grocery store and think they give better flavor (nuttier) and more fiber.

    I made these with a few substitutions and they are delicious!! I used Splenda instead of sugar,cut the butter down to 1/4 c and the choc chips down to 1 c and they are only 43.3 cals per cracker and still delicious!!. Now I can have 3 or 4!! - 4/2/09

    Very surprising! I used Splenda as well, wondering if brown sugar would give it more of a caramel flavor. Also used only half of the chocolate to save calories, and it still satisfies my sweet tooth. - 4/11/13
