Ingredients

4c Baby Spinach
1/4c Reduced Fat Feta Cheese, Crumbled
1-1/2c Fresh Strawberries
1/4c Sliced Almonds
Dressing:
2 TBSP Canola Oil
2 TBSP White Balsamic Vinegar
1/2 TBSP Sesame Seeds
2 tsp Splenda
1/2 tsp Paprika
1/4 tsp Ground Ginger
Directions
Shred baby spinach and slice strawberries length-wise. Combine spinach, feta, strawberries and almonds in a large bowl and set aside.
For the dressing, whisk together oil, vinegar, sesame seeds, Splenda, paprika and ginger in a small bowl.
Pour dressing over salad, toss to combine and serve immediately.

Yummy. Instead of mixing spinach, feta, strawberries and almonds, I layered it: I made a spinach base with the stem ends on the inside, strawberries cut in half with the stem side in. I sprinkled feta over that and the almonds on top before adding the dressing. It tasts as good as it looks. - 9/14/09
