Introduction

Great salad for those hot days, make ahead and store in the fridge for a quick lite lunch or dinner. Great salad for those hot days, make ahead and store in the fridge for a quick lite lunch or dinner.

Ingredients

    8 oz (uncooked) pasta
    1 cup parm cheese
    1 lb cherry tomatoes
    3 cups broccoli florets
    1/4 cup scallions, chopped
    1 tbs olive oil
    2 tbs basil
    1 clove garlic, minced

Directions

Cook pasta per box directions, meanwhile slice tomoatoes in half and place in a bowl. Heat oil on med heat w/ scallions and garlic (careful not to burn the garlic) once oil is hot add broccoli and cook to desired tendernous. Add to bowl w/ tomatoes, add cooked pasta to bowl and toss w/ parm cheese. Makes 4 main dish serving, or 8 side dish servings. Can be served hot or cold.

    The salad was a little dry after mixing everything together, but I added a fat free italian dressing mix made with light evoo and it was perfect! Thanks for the idea! And my guests loved it! - 7/27/09
