Introduction
This is a quick and easy tomato sauce that's great for summer. With a salad, it makes a delicious and filling but light dinner! The recipe can be easily doubled and the sauce keeps for 4-5 days in the fridge. I recommend cooking the pasta fresh the day you need it. This is also fantastic with shrimp substituted for the fresh mozzarella. This is a quick and easy tomato sauce that's great for summer. Ingredients

1 tbsp olive oil
3 cloves garlic
1 28 oz can of diced tomatoes
10 leaves (or to taste) of basil, julienned or chopped
8 oz whole wheat (or Barilla Plus) pasta
4 oz fresh mozzarella, cut into small chunks
Directions
In a medium sized pot, saute garlic in olive oil on medium heat for a few minutes. Also put a pot of water on for the pasta.
Add diced tomatoes. At this step add any seasonings you would like (salt, pepper, crushed red pepper). Cook the sauce without stirring until the tomatoes release the oil (you will see it floating at the top).
While the sauce is cooking, prepare pasta according to package directions.
After the tomatoes release the oil, remove from heat and stir in the basil. Toss the pasta with the sauce. Add 1 oz of cheese to each serving bowl and toss again lightly. (If you toss it too much, the cheese will come together in a big ball.) Serve immediately.
