Introduction
Okra or Lady's finger is cooked with tomatos and garlic in sunflower oil ( you can also use Olive oil ) It is not too dry and neither too soggy. Its delicious with naan or chapati or pita bread. Ingredients

Okra, 500 grams sliced into peices in a ring pattern. ( like do not slit lenghth wise ). The rings should be intact.
Garlic, 6 cloves (chopped)
Red Ripe Tomatoes, 200 grams (chopped)
Chili powder, 1 tsp
Turmeric, ground, 1 tsp
Sunflower Oil, 2 tbsp
Directions
Each serving is 115g approx for 6 people. Cooking time is just 1
First add the oil in the wok (preferably a non stick one) so that it takes up less oil and does not stick on the pan.
Then add the garlic and let it sizzle for just a minute.
Now add the okra and the spices. Add salt and stir well until combined. Semi cover the lid and let it cook on low flame.
Stir it periodically every 3 minute once or twice
When the okra becomes lighter in color, add the tomatoes and stir, this time keep the lid open.
Cook for about 6 -7 minutes or until the water from the tomato dries up a little.
Close flame.
Serve with naan, chapati or just plain pita bread ! Its delicious,
It a light meal so generally it can be for dinner but you can have it for breakfast, lunch , or an outdoor picnic !!

PATRUDE
OK if you like bland food - very disappointed in results, which I followed exactly. To salvage what I made, I used 1 T oo in wok, then added 2 t each coriander powder & cumin seeds, 1 T ginger paste & 1 med onion chopped - saute until onions became sof & then added bland okra mix - very good - 10/29/09
