Ingredients

    1/2 lb diced turkey
    5 cups water
    1 medium onion
    1 cup sliced carrots
    2 cups frozen corn
    1 can (15.25 oz.) black beans
    2 tsp salt
    1 tsp pepper

Directions

This recipe was made from turkey stock by boiling carcass and deboning after boiling for about 1 hour. Once the bones are removed, in separate pan brown onion in 1 tbls olive oil and add 1 cup sliced carrots. Saute until onions are golden brown. Add turkey stock and meat, add corn and 1 can of black beans. Bring to boil, then turn down heat and simmer for 30 minutes. Add salt and pepper to taste. Makes 5 12 oz. servings.

    The sodium seems high, but to be expected from canned beans. Otherwise it sounds really yummy!
