Introduction

Ingredients

    9 large potatoes, peeled, washed and boiled
    1 cp carrots-raw, frozen or canned (nutrition info based on raw)
    12 oz nonfat evaporated milk
    1 cp mexican 4 cheese blend shredded cheese
    6 oz precooked grilled chicken breast strips
    1/2 cp diced onions
    2 tsp garlic powder
    8 oz light sour cream

Directions

Peel, wash and chop potatoes then boil. If using frozen or raw carrots boil with potatoes. When soft remove from heat, drain saving 2 cups liquid. Add ALL other ingrediants except sour cream, stir. Add as much of the reserved liquid as needed to make soup to desired consistency, i personally like mine thick. cook on low until heated through and cheese is melted-about 10-15 min. Add sor cream, stir well. Can also add pepper, makes about 8 servings-soup bowl sized.
